Beer is a low alcoholic beverage consumed by humanity since ancient times. It´s consumption is related to pleasure and is part of numerous social gatherings, which makes it currently have an important role in the economic engine of the country. In recent time there has been a rise in the consumption of denominated craft beer, thus providing greater knowledge to consumers about different beers that have very different sensory characteristics. In addition, these types of beers are conceived as healthier beers, since the processing of these beers is more friendly to bioactive compounds.
For this reason, we added broccoli to increase this functionality of beer, as this vegetable is among the most beneficial for human health as described by many authors.
The addition of broccoli after fermentation, and the maceration of this has caused slight changes in the physical-chemical parameters of beer, has led to an increase in the antioxidant properties of beer, and has included new sensory characteristics in the beer, resulting in a new beer that can enrich the possibilities of consumers increasing the health benefits, although always taking into account that being an alcoholic beverage your intake should be moderate.
