Almond cultivation is deeply rooted throughout the world because it is a product whose management techniques are not very complex and withstands adverse weather conditions, which is decisive when choosing the variety to grow. Traditionally, "Guara" was one of the most cultivated variety in Spain, due to the nutritional and sensorial properties, for its hard shell and amygdaloid morphology. Since many years ago, irrigation is used in order to increase the yield production. However, as water scarcity is considered the highest global risk worldwide and agriculture is one of the main freshwater consumers, the Mediterranean agriculture must find alternatives to cope with this situation. Therefore, in this work, different cultivation methods were compared: irrigated, rainfed, ecological and conventional to see how they affect almond quality parameters such as: yield, morphological characteristics, texture and composition in minerals, fatty acids, organic acids and sugars, antioxidants and polyphenols. After the analysis of 6 samples growth in different agronomic conditions, it was observed that samples growth in water stress conditions were characterized by a higher accumulation of bioactive compounds.
