The IV Range products are fresh processed vegetables from fruits and vegetables that have undergone one or several mild treatments in their preparation, in which the vegetables remain alive after being processed. Taking into account current trends in food, the consumption of these products is increasingly frequent and, however, there are few studies that study their evolution since they are purchased in supermarkets until they are finally consumed. In the present work the microbiological and organoleptic quality of salads of the IV range during its storage in domestic refrigerators is evaluated and different quality attributes related to consumer acceptance of IV Gourmet “Salads” to determine the most important aspects for the consumer at the time of consumption or at the time of purchase. For this study, the "Gourmet" IV range salad was selected since it combines different flavors, colors and textures and is one of the most demanded by consumers. A study of the evolution in domestic refrigerators, of the microbiological quality (molds and yeasts, total mesophiles and total psychrophiles) and of the organoleptic characteristics (presence of strange odors, presence of exudates, browning, global appreciation and purpose of consumption). Also, a survey was carried out to determine the most important aspects considered by the consumer of salads of IV Gama at the time of consumption or at the time of purchase. This study offers consumers scientific information on the state of these salads prepared from their purchase in supermarkets until their consumption in homes.
