The ways and means of producing food for humanity and bringing them to the table of each family is influenced by social and economic aspects that makes the man consume a product of bad or good quality. But science today, studies methods that help to have a good use of natural resources not only for food production but also for its conservation avoiding in this way the significant loss in postharvest.
Thus, this research has been developed in the historical and theoretical framework on food preservation, presenting studies such as edible coating techniques, components, properties and postharvest.
In addition a detailed study of the mango (Mangifera indica L) was carried out its conservation and the use of the technique called edible coating. Five studies with different coatings were analyzed: the study of the application of edible coatings of chitosan and its combination with essential oils on the useful life of the mango (Mangifera indica L.) minimally processed. made by Fabián Rico Rodríguez (2013) - Combined effect of two edible coatings with modified atmosphere in mango (Manguifera indica) Tommy Atkins variety minimally processed refrigerated. of Carmo & Nocua (2011) - Preservation of minimally processed tommy atkins mango by applying an aloe vera coating (Aloe Barbandensis Miller) Pérez, Aristizábal, and Restrepo (2016) Effect of edible coating on the physicochemical attributes of mango 'Tommy Atkins' minimally processed and refrigerated. Those who, through study, reported different methods of edible reception applied to the conservation of the mango, these investigations allowed to present the analyzes and conclusions of each study, being of great importance for the investigations and later experiments that will be carried out.
