Zucchinis are sensitive to low storage temperatures, resulting in cold damage that leads to quality losses. This causes significant depressions on their skin, increasing weight loss, reaching a low quality standard unsuitable for commercialization. In this study, the impact of several post-harvest treatments on 'Cronos' zucchinis was examined to mitigate chilling injury (CI). The effects of substances commonly used for fresh vegetable products, such as 1-methylcyclopropene (1-MCP), were compared with a natural origin compound as melatonin. Both have been proven to reduce CI in several plant products. Results showed that independently applied treatments enhanced certain fruit quality parameters as compared to control fruit. However these treatments did not effectively controlled CI, though the impact was reduced on various aspects. However, combining these separate strategies led to an increase in zucchini's cold tolerance. This synergistic effect influenced all parameters, particularly CI, effectively preserving these plant products. For this reason, the combination of 1-MCP and melatonin could serve as a suitable tool to achieve high-quality standards and extend shelf life under refrigerated conditions.
