In this work the evolution of the physico-chemical, physiological and functional properties in two cultivars (Medium and Large) of jujube fruits (Ziziphus jujuba Mill.) was evaluated during growth and ripening on-tree. Both cultivars showed a non-climacteric ripening pattern, although JM cultivar had smaller, sweeter, softer and higher colored tan GA, which was characterized by having larger and firmer fruits, although less sweet and colored. Both varieties showed high AAT which was highly correlated with concentration of total phenols, leading to give them great functional properties. The jujube tree is grown mainly China, where it is recognized as an excellent source of biologically active compounds with both functional and nutraceutical properties. However, in Spain this crop has little economic importance and it is just marginally growth for self-consumption or with ornamental purposes. Given the excellent properties of these fruits and the high crop tolerance to drought and salinity it growth of these varieties with high yield and fruits with high functional properties should be promoted
