In this project, biosurfactants and, more specifically, sophorolipids, are tested in the process of anaerobic digestion of fats. Sophorolipids are produced from the process of solid state fermentation of a waste mixture: winterization oil cake (WOC), sugar beet mollases and wheat straw. In order to establish the effects of sophorolipid in the anaerobic digestion of fats, BMP (Biochemical Methane Potential) tests are carried out on a pure fat, olive oil and a residual fat, WOC, and three different doses are tested (0,14, 0,28 y 0,55g). In addition, the simulation of methane production is carried out using Gompertz model. Finally, it is concluded that the use of SL increases the production of methane, with a dose of 0,14g of SL, and that the BMP test of fats has to last a minimum of 40 days.
