The Mollar de Elche pomegranate (Punica granatum L. cv. Mollar de Elche) is one of the most cultivated varieties in Spain since it is highly appreciated by consumers due to its excellent attributes of organoleptic quality. However, it has a low color of both the skin and the arils compared to other varieties although they do not possess the good organoleptic characteristics of the Mollar de Elche variety. The objective of this work was to evaluate the effect of pomegranate treatments of the Mollar de Elche variety with 5mM methyl jasmonate (JaMe), 10mM oxalic acid (AO), 10 mM salicylic acid (AS) and his derivative 10 mM methyl salicylate ( MeSa) on certain parameters of fruit quality at the time of harvest and during refrigerated storage, especially on the color of the fruit, in order to improve it and make this variety more competitive in the market. The trees were treated in 4 key moments of fruit development, with the last treatment being carried out 14 days before harvesting. The application of oxalic acid increased the external coloring of the fruit, while the application of the methylated compounds had an opposite effect, however, with all the treatments applied there was an increase in the coloring of the arils. Therefore, the application of elicitors in pre-harvest could be a safe tool and respectful with the environment, with potential to improve attributes of quality of the fruits at the time of collection and during storage.
