The electrical conductivity measured on various agrifoods products is used as a technique to determine the different parameters, as the moisture content and germinability of seeds or the resistance to frost of fruits (Alwis & Mitchell, 1989), (Paine, D.H., et al., 2002). Latest research (Nelson & Nigmatullin, 2006), (Abu Izneid, B., et al., 2011), set out the measurement of electrical impedance as a technique for assessing the stage of maturity and fruit quality. In this work, we have developed an experimental conductivity of alternating current (AC) at 50 Hz frequency, controlled by a microcontroller PIC18F2550 linked to PC via USB, which has been used to measure the electrical conductivity in the mesocarp of fruits for oil production (Olea europaea L.) in different stages of maturity, relating it to the values obtained from the measurement of electrical conductivity (Expressed in% of Full Scale) to establish objectively fruits maturity index, and determinate the optimal timing of collection based on parameters such as oil yield and fruit quality of the resulting oil. It has been studied the electrical conductivity evolution in the mesocarp of the fruit, in four different cultivars, 'Picual', 'Manzanilla de Sevilla', ‘Hojiblanca’ and ‘Gordal sevillana, concluded that the conductivity increases according to ripeness stage. Likewise, each variety has a characteristic average value for the latter stages of ripening maturing.
