Epidemiological studies have found a consistent association between consumption of fruits and vegetables and reduced risk of chronic diseases such as cancer and cardiovascular disease. There is evidence that much of the potential health benefit of these plant foods may come from the content of bioactive compounds with antioxidant properties and not designated as traditional nutrients. Red fruits like strawberries, pomegranates, raspberries and currants and blue-purple grapes, blueberries and blackberries fruits are rich in phenolic compounds, among which are the anthocyanins that give them their characteristic color. However, these fruits are seasonal and highly perishable, so they are only available in the market for a very short time. One of the technologies of prolonged preservation of fruits is the partial dehydration, in this work the influence of this method on the content of bioactive compounds, anthocyanins and phenols is studied, as well as an identification and quantification of individual anthocyanins is done in such fruits . The results show that fruits such as currants are optimal for preservation by the method studied
