Spain is the world's leading exporter of citrus fruits for fresh consumption. The economic losses caused by post-harvest diseases constitute one of the main problems of the Spanish citrus sector. Postharvest diseases in citrus fruits are controlled by applying chemical fungicides in warehouses before their conservation. However, the growing social concern about the dangers to health and the environment related to the use of synthetic chemical treatments has increased the demand for organic products, making it necessary to develop alternative non-polluting methods. Sodium nitroprusside (NPS) is a nitric oxide (NO) donor in aqueous solution, a compound that regulates various processes in plants, including plant growth, development and defense. The objective of this work was to evaluate the effect of postharvest treatments with NPS in lemon on quality during cold storage. The organic lemons of the Primofiori variety were immersed in an aqueous solution of 0.1 and 0.5 mM NPS for 5 minutes. The results showed that the application of NPS in postharvest delayed the losses of quality in the fruits and increased the resistance reducing the rottenness in fruits. Therefore, the postharvest application of NPS could be an effective tool to maintain quality and extend shelf life in organic lemon.
