Olive tree is one of crops more extended in Spain, especially in Andalucía. This type of crop has changed from drought, traditional cultivation system, to irrigation, superintensive cultivation system. This change make necessary the use of irrigation water. Due to climatic change, decrease in water reserves and shortage of rains, it is important to conduct research of new controlled deficit irrigation methodologies. This type of irrigation system consists in reducing the amount of irrigation water at trees at certain moments, such as stone thicknening, but new researching about moment, duration and intensity of restriction are needed to avoid nutritional, physico-chemical and organoleptic quality. In this study, 4 irrigation system in superintensives olive trees were evaluated to analyze their effects on composition and organoleptic characteristic of olive oils, demonstrating that it is possible to improve olive oil characteristic, and as the same time save water. Because of that hydroSOStainable, environmental friendly and of high quality.
