Efecto del lavado en el contenido de arsénico de diferentes tipos de arroz (Oryza Sativa)

Abstract

Es bien conocido que el arsénico, sobre todo el inorgánico, posee un riesgo muy alto para la salud de los seres humanos. También que este metal se encuentra en gran cantidad en el arroz y productos elaborados a partir de este cereal. A día de día la Unión Europa no ha regulado ningún Reglamento para controlar la concentración de este metal en el arroz ni en sus derivados, por otro lado, junto a la (EFSA) están recopilando datos sobre diferentes concentraciones de diferentes productos y partes del mundo para encontrar la forma de reducir este metal. En este estudio se estudió el comportamiento de ocho tipos de arroces tras un número de lavados y se observó si existen diferencias entre las concentraciones de arsénico antes y/o después de aplicarle los lavados.
