The aim of the work was the evaluation of the polyethylene packaging and refrigerated storage on the functional quality of brócoli during 21 days at 0ºC. The antioxidant capaciy was measured using three different methods: ABTS, FRAP y DPPH, together with the amount of polyphenols, ß-carotene and chlorophyll. The results in the packaged and control samples showed an increase in polyphenols, ß-carotene, and chlorophyll during the first week of storage. However, at the end of the storage period, the unpackaged brócoli presented higher concentration of polyphenols and ß-carotene respect to the first day of storage, but with lower chlorophyll contents. In packaged samples the values did not change during the storage. In both samples a high correlation between polyphenols and carotenes with the antioxidant capacity (r ≥ 0.8)
